What I really wanted to title this post was “White Girl Empanadas” but I figured that might stir up a little controversy so I saved it for the actual writing. The only reason I feel comfortable saying these are white girl empanadas are because I actually know how to make empanadas the Puerto Rican way and this is pretty much an “American” version of them. For those of you that don’t know what empanadas are, please go out immediately and add some variety to your life. I promise you, you won’t be sorry.
This is a pretty easy recipe, a big thank you to the Pillsbury commercial for the idea. I went to the website to get the recipe and for whatever reason couldn’t find it. So I figured it went a little something like this…  

No Mess Sloppy Joes or Biscuit Sloppy Joes

1 Pound Ground Beef
1 Can Sloppy Joe Mix
Shredded Cheddar Cheese
Biscuits (Canned or from scratch, better known as Bisquick)

Step One: Preheat oven to the temperature on the can of biscuits or on box of bisquick mix.

Step Two: Cook Ground Beef and add Sloppy Joe Mix.

Step Three: Flatten out biscuits. (If you are making the biscuits, make them and then flatten.) You can use a rolling pin, a cup on its side or your hands.

Step Four: Place small amount of Sloppy Joe Meat on top of flat biscuit. Add cheese.

Step Five: Fold biscuit in half and press around the edge with a fork to close. Flip it over and repeat the forking around the edge. This creates a tight seal.

Step Six: Bake in preheated oven according to directions on biscuit can or box.

Step Seven: Enjoy with no mess!

You might have some leftover sloppy joe meat, so you can either enjoy a messy sloppy joe later in the week or add to spaghetti sauce to create meat sauce with a little more flavor.

You can even make a double batch and freeze them for a quick dinner another night! LOVE!
